Getting our Bake On with JimJams Spreads

Anyone that knows Mrs Lighty well will know how much I love my chocolate spread. Indeed, when I was newly pregnant, my then colleagues guessed that I was pregnant simply by my ‘second breakfast’ of chocolate spread on toast each morning at about 9:30am! But, it has to be said, a chocolate spread addiction isn’t really the healthiest of addictions. Step in JimJams Spreads!

When we were recently sent a jar of JimJams Spreads and invited to try baking with the chocolate spread, there was no way that we were going to say no! I was intrigued to see exactly what was different about JimJams. Well, JimJams Spreads are basically a low sugar version of our normal family favourites. JimJams has 83% less sugar than other standard chocolate spreads. This obviously makes them healthier and kinder on teeth. They’re also gluten free, diabetic friendly, suitable for vegetarians and Sugarwise certified.

It’s always great to find a healthy alternative for Baby Lighty, especially as he loves to bake. He loves chocolate and chocolate cake, so I thought we’d have a go at making one of the recipies on the JimJams Spreads’ site. It needed to be a simple recipe (if you remember my Halloween baking fail, you’ll know why!) and the No Added Sugar Chocolate brownies seemed like the perfect choice.

Fortunately, they were simple enough that even a baking dunce like Mrs Lighty could manage them! They were so straightforward to do, and by melting the spread in the microwave for a bit first, it was really easy for Baby Lighty to mix the mixture up, too. I also showed him how to spread the mixture in the tin like butter on bread, which he got the hang of straight away. I should also probably admit that at this point, Mrs Lighty may have pinched a little bit out of the jar to try! Well, I needed to test it for the purposes of this review, right?! And I’m pleased to report that it tasted every bit as good as all of the other chocolate spreads I have tried. And there have been many chocolate spreads that I have tried!

Now the only thing is, Baby Lighty seems to have come to the conclusion that baking isn’t baking without adding sprinkles! Once we’d spread some of the chocolate spread on top of the baked brownie mixture (and please note, the recipe really calls for one and a bit jars of JimJams Spreads, but we just made do with what we had), he was adamant that we add a few sprinkles to the top!

So much for ‘no added sugar’ brownies, oops!

If you’d like to have a go at making your own No Added Sugar Brownies, here’s the recipe:

No Added Sugar Chocolate Brownies:
Ingredients:

350g JimJams Hazelnut or Milk Choc Spread
3 Eggs
170g Plain Flour
½ Teaspoon Baking Powder
Butter to grease Baking Dish
1 Tablespoon Flour
175g JimJams Hazelnut or Milk Chocolate Spread for topping

Method:

Pre-Heat oven to 180C, using the butter lightly grease an 8-inch square baking dish. Sprinkle a tablespoon of flour over the lightly greased baking dish and shake the dish to coat the butter. Tip away any excess flour.

Place 350g of JimJams Chocolate spread in a microwavable bowl and heat in the microwave on high for 30 seconds. In a large bowl mix together the eggs and the melted JimJams Chocolate spread until well combined. Sieve in the flour and baking powder and mix till smooth.

Pour into the prepared baking dish, bake for 20 minutes or until you can push a knife into the mix and it comes out clean. (It is better to under cook and have slightly squidgy brownies than over cook and dry them out)

Leave until cool, then place 175g of JimJams Chocolate Spread into a microwavable bowl and microwave on high for 30 seconds. Pour over the brownies and place in the fridge until set.

Cut into squares and enjoy!
